Sweet and Savoury Pork Chops.
A treat for your taste buds, this juxtaposition of sweet and savoury flavours will have you wanting more!
Ingredients:
- 4 pork loin chops
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 large onion, sliced
- 2 teaspoons smoked paprika
- 1 clove garlic, crushed
- 1 tablespoon apple cider vinegar
- 1/4 cup water
- 1 can diced tomatoes, {400 g}
- 1 tablespoon butter
- 1/4 cup fresh parsley, chopped
- 1/2 cup sour cream
- 250g packet egg noodle pasta
Method:
- Heat 1 tbs olive oil on high in skillet or large frypan.
- Sprinkle pork chops with salt & pepper, cook for 4 minutes, turning once.
- Transfer meat to a plate.
- Heat 1 tbs olive oil in skillet, add sliced onion and cook on medium high heat for 5 minutes.
- Add paprika and crushed garlic to pan, stir through for 30 seconds.
- Add to pan apple cider vinegar, water and can of diced tomatoes, stir well to combine.
- Return chops to pan and simmer for 15 minutes.
- Meanwhile, cook pasta as directed.
- Remove chops from sauce and slice.
- Add sour cream to tomato sauce and mix in pan.
- Drain pasta, toss in butter and chopped parsley.
- Layer pasta, sliced pork and spoon over sauce.
