Smokey Mac and Cheese
Mac and Cheese made fancy
Ingredients:
- 500g smoked bacon
- 2 cups macaroni
- 1 cup cheddar chese
- 1/2 cup provolone (monetary jack is a good substitute)
- 1/2 cup parmesan cheese
- 2tbsp butter
- 1/2 cup plain flour
- 4 cups of milk
Spice Mix
- 1/2 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp chilli powder (you can also use your favourite hot sauce0
- 1/2 tbsp worcestershire sauce
- 1/2 cup chicken stock
Method:
- Preheat oven to 180c. Dice your bacon and spread on an oven tray. Cook until slightly crispy. Drain and set aside (save 2tbsps of the lard off the bacon)
- Cook two cups of macaroni until aldente
- Grate your cheese, all 3 kinds.
- Take 2 tbsps of the bacon fat and add to a large pan. Add 2 tbsps of butter, ½ cup of plain flour and cook off for a few minutes ( important or your sauce will be chalky)
- Add spice mix and 4 cups of milk. cook on low heat until you start to see bubbles and sauce starts to thicken.
- Add cheese and mix until smooth. Add cooked pasta and cooked chopped bacon and cook for a further 3-5 minutes or until everything is heated through and sauce has thickened nicely.
