Mac and Cheese made fancy
- 500g smoked bacon
- 2 cups macaroni
- 1 cup cheddar chese
- 1/2 cup provolone (monetary jack is a good substitute)
- 1/2 cup parmesan cheese
- 2tbsp butter
- 1/2 cup plain flour
- 4 cups of milk
- 1/2 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp chilli powder (you can also use your favourite hot sauce0
- 1/2 tbsp worcestershire sauce
- 1/2 cup chicken stock
- Preheat oven to 180c. Dice your bacon and spread on an oven tray. Cook until slightly crispy. Drain and set aside (save 2tbsps of the lard off the bacon)
Cook two cups of macaroni until aldente
Grate your cheese, all 3 kinds.
Take 2 tbsps of the bacon fat and add to a large pan. Add 2 tbsps of butter, ½ cup of plain flour and cook off for a few minutes ( important or your sauce will be chalky)
Add spice mix and 4 cups of milk. cook on low heat until you start to see bubbles and sauce starts to thicken.
Add cheese and mix until smooth. Add cooked pasta and cooked chopped bacon and cook for a further 3-5 minutes or until everything is heated through and sauce has thickened nicely.
