Shredded Beef Burrito Bowl
Why eat out when you can make it at home?
Ingredients:
- 2 cups beef stock
- 2 tablespoons tomato paste
- 2 tablespoons beef gravy
- Taco seasoning
Tortilla Chips
- 1 packet of 8 tortillas/wraps cut into quarters
Guacamole
- 2 medium avocadoes
- 1 Lime
- Salt and Pepper
Black Bean Rice
- 1 Can of black Beans
- 2 Cups of rice
Other
- 1 finely chopped red onion
- 2 finely chopped tomatoes
- Sour cream
Method:
Shredded Beef
- Quarter your beef
- Place into slow cooker with stock and tomato paste
- Cook on low for 6 hours or until beef is tender and falling apart.
- Shred Beef and cook on high until liquid reduces. You can add some gravy powder or corn flour if you like a thicker sauce
- Add Taco seasoning
Tortilla Chips
- Preheat oven to 180c.
- Brush with oil. Place in a single layer on baking dish
- Bake in oven for 5 minutes each side or until golden and crispy.
- Salt
Guacamole
- ‘Smash’ avocado with fork
- Add lime, salt and pepper juice to taste
Black bean rice
- Cook rice as per packet instruction.
- Stir through drained black beans
To assemble
- Plate your rice & black beans
- Top with shredded beef
- Add tomato and onion
- Top with guacamole, sour cream and tortilla chips
- Garnish with lime
- Devour!
