Why eat out when you can make it at home?

Ingredients:

Shredded beef

  • 2 cups beef stock
  • 2 tablespoons tomato paste
  • 2 tablespoons beef gravy
  • Taco seasoning

Tortilla Chips

  • 1 packet of 8 tortillas/wraps cut into quarters

Guacamole

  • 2 medium avocadoes
  • 1 Lime
  • Salt and Pepper

Black Bean Rice

  • 1 Can of black Beans
  • 2 Cups of rice

Other

  • 1 finely chopped red onion
  • 2 finely chopped tomatoes
  • Sour cream

Method:

Shredded Beef

  1. Quarter your beef
  2. Place into slow cooker with stock and tomato paste
  3. Cook on low for 6 hours or until beef is tender and falling apart.
  4. Shred Beef and cook on high until liquid reduces. You can add some gravy powder or corn flour if you like a thicker sauce
  5. Add Taco seasoning

Tortilla Chips

  1. Preheat oven to 180c.
  2. Brush with oil. Place in a single layer on baking dish
  3. Bake in oven for 5 minutes each side or until golden and crispy.
  4. Salt

Guacamole

  1. ‘Smash’ avocado with fork
  2. Add lime, salt and pepper juice to taste

Black bean rice

  1. Cook rice as per packet instruction.
  2. Stir through drained black beans

To assemble

  1. Plate your rice & black beans
  2.  Top with shredded beef
  3. Add tomato and onion
  4. Top with guacamole, sour cream and tortilla chips
  5. Garnish with lime
  6. Devour!
