These Stuffed Beef Roll-Ups with herbs and parmesan will certainly impress dinner guests. A nice and easy recipe that will taste delicious and wow your friends.
Ingredients
- 1 kg BBQ beef steaks
- 1 ½ cups grated parmesan cheese
- 2-3 tablespoons chopped fresh flat leaf Parsley
- ¼ cup chopped fresh Basil leaves
- Zest of one small lemon (less if it’s a big one)
- Salt and Pepper to season
- Butter or olive oil to pan fry
Method:
- Finely chop the herbs and mix with the parmesan cheese and lemon zest.
- Lay the steaks out on a flat surface. Season with salt and pepper.
- Distribute the herb and cheese mix across all steak evenly., press it down a little to compact it.
- Starting at the shortest edge, roll up each steak to form a log. Cut the roll into mini portions, about 3-4 cm wide. This might be 2-4 pieces per steak depending the width of it. Secure with toothpicks to stop them unrolling.
- In a medium-hot frying pan, add a little butter or olive oil.
- Cook the roll ups cut side done until nicely seared and the cheese has turned golden (around 3 minutes). Turn the to the other cut side and cook for a further 2 minutes. They should be seared and golden on the outside and still a little pink inside. If you prefer them well done, place in a moderate over for further few minutes to cook through.
- Serve with a nice big salad and sides of your choice or steamed vegetables. Perhaps a squeeze of lemon juice and a little more salt.
