Ingredients:

  • 4 boneless chicken breast
  • Grated rind and juice of 1 lime
  • 1 tbsp organic honey
  • 1 tbsp oil
  • 1 garlic clove finely chopped
  • 1 tbsp fresh thyme 

Method:

  1. Preheat oven to 180° arrange the chicken breasts in a shallow roasting tin
  2. Put the lime rind, juice, honey, oil, garlic & thyme in bowl and combine thoroughly. Spoon the mixture evenly cover the chicken breasts and season with pepper.
  3. Roast the chicken in the preheated oven, basting every 10minutes for 30 – 40 minutes or until the chicken is tender and the juices run clear. (Insert skewer into thickest part if the chicken) if juices run pink return the chicken and cook for a further 5minutes and re-test. As the chicken cooks the liquid in the pan thickens to give a tasty sticky chicken.
  4. Serve with potatoes & salad.
