Sticky Lime Chicken

Ingredients:
- 4 boneless chicken breast
- Grated rind and juice of 1 lime
- 1 tbsp organic honey
- 1 tbsp oil
- 1 garlic clove finely chopped
- 1 tbsp fresh thyme
Method:
- Preheat oven to 180° arrange the chicken breasts in a shallow roasting tin
- Put the lime rind, juice, honey, oil, garlic & thyme in bowl and combine thoroughly. Spoon the mixture evenly cover the chicken breasts and season with pepper.
- Roast the chicken in the preheated oven, basting every 10minutes for 30 – 40 minutes or until the chicken is tender and the juices run clear. (Insert skewer into thickest part if the chicken) if juices run pink return the chicken and cook for a further 5minutes and re-test. As the chicken cooks the liquid in the pan thickens to give a tasty sticky chicken.
- Serve with potatoes & salad.
