Slow Cooker Whole Chicken
This Slow Cooker Whole Chicken recipe is a great way to change up your chicken regime. When I have a whole chicken at home it generally ends up as chicken and sweet corn soup. Although it’s absolutely delicious, sometimes it’s good for a change.
The main reason my whole chicken ends up as soup is that by the time I get home to cook dinner, there’s never enough time to roast a chook. Boiling is way quicker. But with this slow cooker recipe I can pop dinner on in the morning before I leave for work and it’s ready when I get home. Nothing better!
Ingredients:
- 1 large whole chicken
- 2 teaspoons paprika
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon thyme
- 1/2 teaspoon garlic powder
- 1.4 teaspoon black pepper
- 1 onion
Method:
- Combine the dried spices in a small bowl.
- Loosely chop the onion and place it in the bottom of the slow cooker.
- Rub the spice mixture all over the chicken. You can even put some of the spices inside the cavity and under the skin covering the breasts.
- Put chicken on top of the onions in the slow cooker, cover it, and turn it on to high. There is no need to add any liquid.
- Cook for 4 – 5 hours on high (for a 3 or 4-pound chicken) or until the chicken is falling off the bone.
