Ritz Cracker Chicken
A little twist on your typical crumbed chicken. Crunchy, salty and simply yum!
Ingredients:
- 6 thin chicken thighs (bash them out a little to make them an even thickness
- 2 packets (rolls) of Ritz crackers
- 2 eggs
- Butter
Method:

Get with two shallow bowls. In one bowl, beat 2 eggs. In the other, mix together crushed Ritz Crackers.

Dip the chicken into the beaten eggs, then into the cracker mixture.

Place the cracker-coated chicken into a large baking dish and arrange cubes of butter around each piece of chicken.

Bake 180° for 40 minutes.
