Lamb Shanks with Sweet Potato Mash

Try this Lamb Shanks with Sweet Potato Mash recipe. As the weather gets cooler you cannot go wrong with lamb shanks. It’s simple and delicious!
Ingredients:
Lamb Shanks:
- 2 cups of liquid beef stock
- 4 carrots, peeled and roughly chopped
- 1 Can of diced garlic tomatoes
- 3 Deagon Bulk Meats lamb shanks
- 4 tbsp of Deagon Bulk Meats mint & rosemary seasoning
Sweet Potato Mash:
- 1 large sweet potato, cut into 1 inch cubes
- 1 tbsp butter or marg
- 3 tbsp milk
- salt and pepper to taste
Method:
- Place the lamb shanks’ ingredients into the slow cooker & cook on low for 6 hours.
- With 30 minutes to go, place the sweet potato in cold water & bring to the boil, cook until tender.
- Drain & add butter, milk & mash until smooth. Season to taste.
- Serve lamb shanks & sauce on a bed of sweet potato mash.
