Method:

1. Dice onion and cook until opaque. Add in your diced chicken thighs and cook until browned.

2. Add in bacon and mushrooms and cook on medium heat until mushrooms soften and bacon is browned.

3. Make your zucchini noodles (I purchased my zoodle maker from my local supermarket) or you can purchase pre made zucchini noodles.

4. Once your chicken, mushrooms, bacon and onion are cooked, drain the pan of any oil and add your zucchini noodles and stir through the cream.

5. Serve and top with a sprinkle of parmesan cheese.
