Chicken Quesadillas
These Chicken Quesadillas are a quick, simple and delish meal and so easy to make. Grab your sandwich press and get to it!
Ingredients:
- 150g chicken, cooked and chopped
- 1 capsicum, chargrilled, skin removed, thinly sliced
- 2 tablespoons sun-dried tomatoes, thinly sliced
- 1 tablespoon fresh oregano leaves, roughly chopped
- 50g feta, crumbled
- 1/2 cup grated cheddar
- 4 yirros bread rounds
Method:
- In a bowl, add chicken, capsicum, tomato, oregano, feta and cheddar.
- Preheat a sandwich press.
- Place 2 bread rounds on a flat surface. Divide chicken mixture between rounds.
- Top with remaining bread rounds.
- Place in sandwich press and toast for 2 to 3 minutes until cheese has melted and filling is heated through.
- Cut into quarters. Serve.
