Chicken Quesadillas

These Chicken Quesadillas are a quick, simple and delish meal and so easy to make. Grab your sandwich press and get to it!

Ingredients:

  • 150g chicken, cooked and chopped
  • 1 capsicum, chargrilled, skin removed, thinly sliced
  • 2 tablespoons sun-dried tomatoes, thinly sliced
  • 1 tablespoon fresh oregano leaves, roughly chopped
  • 50g feta, crumbled
  • 1/2 cup grated cheddar
  • 4 yirros bread rounds

Method:

  1. In a bowl, add chicken, capsicum, tomato, oregano, feta and cheddar.
  2. Preheat a sandwich press.
  3. Place 2 bread rounds on a flat surface. Divide chicken mixture between rounds.
  4. Top with remaining bread rounds.
  5. Place in sandwich press and toast for 2 to 3 minutes until cheese has melted and filling is heated through.
  6. Cut into quarters. Serve.
