Bacon and Cheese Chicken

This Bacon and Cheese Chicken recipe is amazing. Simply because anything with Bacon is amazing. And this recipe just so happens to contain my three favourite things! Bacon, Chicken and Cheese. You can’t go wrong with these delicious dinner!
This recipe is a single portion.

Ingredients:

  • 1 small chicken breast
  • 1 slice of your favourite cheese
  • 2 rindless bacon rashers
  • 1 medium-size potato, washed and quartered
  • 1 medium size carrot
  • 2 small squash
  • Olive Oil
  • Salt and Pepper to season

Method

  1. Preheat oven to 230c.
  2. Toss potato in olive oil and season. Cook potato in a lined baking dish for approximately 20 minutes or until golden.
  3. Reduce oven to 200c.
  4. Cut a pocket into your chicken breast and push the cheese into the pocket.
  5. Wrap the bacon around the breast and secure with toothpicks.
  6. Season.
  7. Heat 1 tsp olive oil in a pan and cook the chicken over medium heat for 1 to 2 minutes.
  8. Add chicken to the baking dish with the potatoes and roast for 10 minutes
  9. Serve the chicken and potatoes with steamed carrot and squash.
