Thai Beef Mince Lettuce Cups
Fill crisp lettuce cups with Thai Beef Mince for a quick and easy meal the whole family will enjoy.
Ingredients
- 500g beef mince
- 1 tablespoon green curry paste
- 1 tablespoon fish sauce
- 1 teaspoon white pepper
- 2 teaspoons sugar
- 1/2 teaspoon Chinese five spice powder
- 1 teaspoon minced fresh ginger
- 1/4 cup finely diced coriander stalks
- 1 tablespoon peanut or vegetable oil
- 1/2 cup cooked rice vermicelli noodles
- Juice of 1/2 a lime
- 1/4 red onion, thinly sliced
- 8 baby cos lettuce leaves, washed
- 1/2 long red chilli, finely diced (optional)
- 1/4 cup roughly chopped peanuts (optional)
Method
Step 1
Place beef mince, curry paste, fish sauce, pepper, sugar, five spice, ginger and coriander stalks in a mixing bowl. Combine well using your hands. Set aside for 15 minutes for flavours to infuse.
Step 2
Place wok or frying pan over high heat, add oil, once hot add mince mixture, break up mince and stir-fry for around 5 minutes, or until mince is cooked through. Add rice vermicelli noodles and toss to combine.
Step 3
Remove from heat, add lime juice and add red onion, toss to combine.
Step 4
Place cos lettuce leaves onto serving plates, spoon in beef mince mixture, garnish with chilli and peanuts.
