A little twist on your typical crumbed chicken. Crunchy, salty and simply yum!

Ingredients:

  • 6 thin chicken thighs (bash them out a little to make them an even thickness
  • 2 packets (rolls) of Ritz crackers
  • 2 eggs
  • Butter


Method:

  1.  Get with two shallow bowls. In one bowl, beat 2 eggs. In the other, mix together crushed Ritz Crackers.

  2.  Dip the chicken into the beaten eggs, then into the cracker mixture.

  3. Place the cracker-coated chicken into a large baking dish and arrange cubes of butter around each piece of chicken.

  4. Bake 180° for 40 minutes.
